Whilst we showcased the Tortilla as our staple Mexican bread at the recent Breaking Bread event this recipe uses the flatbread to create a delicious meal that is easily adapted - the Quesadilla. 

INGEDIENTS

Mexico City Tortillas
Quesadilla fillings - can be anything you like but traditionally ham, cheese, refried beans, leftovers
Mexican Salsa, sour cream and lettuce to serve

METHOD

1. Warm up the tortillas until soft. You can do this in the microwave as a stack of approx. 10. Wrap the tortillas with a tea towel, place in a plastic container or a plate and microwave for 1.5 min. This can also be done in a very hot pan placing the tortilla in for 30 seconds each side and then wrapping in a tea towel to keep warm and soft. 

2. In a shallow pan put cooking oil to heat, one by one fill your tortillas with ham and cheese (to increase deliciousness you can also add refried beans) fold the tortilla and place in the oil to fry both sides until golden and cheese melted.

3. Serve with a Mexican salsa (Green tomatillo salsa, Red salsa, Chipotle salsa) add sour cream and lettuce.
