As well as providing a bounty of bush tucker, this ancient species - the Podocarpus elatus - Illawarra Plum Pine - makes a fantastic screen. Although it is slow growing the end result is worth the wait. Podocarpus elatus is diocesous - which means it needs a pale and a female plant to produce fruit. Occasionally you will come across a plant that has both male and female reproductive components. The plant is salt tolerant and high in vitamin C and antioxidants. Ingredients

(Serve with plain yoghurt, vanilla ice cream or your favourite dessert)

500g Illawarra Plums, washed
200g caster sugar
Cinnamon Stick
Vanilla Pod- split and seeds scraped from middle
 

Method


Combine plums, sugar, cinnamon and vanilla.
Bring to the boil and then simmer until sugar is dissolved.
Strain to remove seeds and cinnamon.
