Momo Dough

Ingredients:

1/2 kg white flour

1/2 teaspoon baking powder

300 mL water

Method:

Put the flour on a flat wooden base or kitchen top and make a well in the middle

Pour water in the well; ensuring that it does not overflow

With one hand, squeeze the mixture and work in a circular motion

Gather more flour into the wet ingredients into the center until you have a single mass. Add more water if necessary until the consistency feels smooth. A good consistency is a mixture that does not stick to your hands.

Dust the bench with flour and gently knead the mixture until all of the flour is mixed in

Roll dough into a sausage shape, wrap in plastic wrap or place in a sealed bowl to let stand for 10 minutes

Unwrap and place on a lightly floured surface, cut the tube into 1cm slices and roll them into consistent balls.

Sprinkle the dough balls with flour and flatten each one first by hand, then with a rolling pin

Using the rolling pin, flatten the edges first and continue around in a circular motion. The centre can remain thicker than the edges, as this will facilitate easy folding

Add filling and fold edges upward, enclosing the filling

Start by squeezing the edges of one side to make the first part of the pleated edge. With the index finger of the left hand, push the filling in as you continue squeezing the edges with the thumb and index finger of the right hand

A beautiful flower will emerge with the opening at the top


Vegetarian Momo Filling

Ingredients:

1 drumhead cabbage or 1/2 wombok (Chinese cabbage), chopped

280g firm soyco tofu

10 shiitake mushrooms or dried Chinese mushrooms, chopped

4 onions, finely chopped

2 carrots, grated

2 tablespoons grated ginger

4 tablespoons oil

salt and pepper to taste

Method:

Mix all ingredients except oil thoroughly

Add oil and mix again

Fold momo as per momo dough recipe above

Steam for 12 minutes

Serve with chili sauce and steamed rice or roti

Chicken Momo Filling

Ingredients:

1 1/2 kg chicken mince

1 1/2 cups water

1 1/2 cups chives, chopped

2 onions, finely chopped

6 cloves garlic, grated

6 tablespoons oil

salt and pepper to taste

Method:

Mix all ingredients except oil together thoroughly

Add oil and mix again

Fold momo as per momo dough recipe above

Steam for 15 minutes

Serve with chilli sauce and steamed rice or roti
